Ingredients

  • 12 slices bacon, cooked and crumbled
  • 1 cup shredded Swiss cheese
  • 1/3 cup chopped onion
  • 2 cups milk
  • 1 cup Bisquick baking mix
  • 4 eggs
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Instructions

  1. Preheat oven to 400°.
  2. Lightly grease a 10-inch pie plate. Sprinkle bacon, cheese, and onion in the pie plate.
  3. Beat milk, Bisquick, eggs, salt, and pepper in a medium-sized bowl with an electric mixer until smooth, about 1 minute.
  4. Pour the mixture into the pie plate. Bake in the hot oven for 35 minutes or until golden brown and a knife inserted halfway between the center and edges comes out clean.
  5. Garnish with tomato slices and bacon strips if desired. Refrigerate any remaining quiche.
