Ingredients

  • 2 pkg. frozen chopped broccoli
  • 3 c. shredded Cheddar cheese
  • 1 1/3 c. milk
  • 3 eggs
  • 3/4 c. Bisquick baking mix
  • 3/4 tsp. salt
  • 1/4 tsp. pepper
  • 2/3 c. chopped onion

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 10-inch pie plate with 1 1/2-inch depth.
  3. Rinse frozen broccoli under cold water to thaw, then drain thoroughly.
  4. Mix broccoli, 2 cups of shredded Cheddar cheese, and chopped onion in the pie plate.
  5. In a blender, beat milk, eggs, Bisquick baking mix, salt, and pepper until smooth, about 15 seconds.
  6. Pour the milk mixture into the pie plate over the broccoli and cheese mixture.
  7. Bake until a knife inserted in the center comes out clean, approximately 25 to 35 minutes.
  8. Sprinkle remaining cheese on top of the pie.
  9. Bake for an additional 1 to 2 minutes until the cheese is melted.
  10. Allow to cool for 5 minutes before serving.
