Ingredients

  • 3 cups dry black-eyed peas
  • 4 ripe tomatoes
  • 1 large onion
  • small amount freshly grated ginger
  • few cloves minced or crushed garlic
  • cilantro
  • salt to taste
  • ready-mixed curry powder
  • Garam Masala powder
  • 2 Tbsp vegetable oil

Instructions

  1. Heat vegetable oil in a nonstick frying pan.
  2. Add minced garlic, grated ginger, and chopped onion; stir-fry for 5 minutes.
  3. Add diced tomatoes and cook for 10 minutes, stirring frequently.
  4. Add curry powder and prepared black-eyed peas.
  5. Bring the mixture to a boil and cook on medium heat for 10 more minutes.
  6. Garnish with Garam Masala and finely chopped cilantro before serving.
