Indian Pie

A hearty Indian-inspired meat and vegetable pie topped with mashed potatoes, rich in flavors and perfect for family dinners or comfort food cravings.

Ingredients

  • 2 lb. ground meat
  • 2 packages (10 to 16 oz.) frozen mixed vegetables
  • 5 to 6 large potatoes
  • 1 can tomato soup
  • 1 large onion
  • 1/4 to 3/4 stick butter
  • salt
  • pepper

Instructions

  1. Braise ground meat and chopped onion in a frying pan.
  2. Drain off excess liquid.
  3. Cook frozen mixed vegetables as directed on package.
  4. Peel and boil potatoes until tender.
  5. Mash potatoes with milk and a few pats of butter.
  6. Combine cooked meat, onion, vegetables, and tomato soup (use only half a can of water). Mix well.
  7. Season with salt, pepper, garlic powder, and onion powder to taste.
  8. Spray a 13 x 9 x 2-inch baking dish with cooking spray.
  9. Spoon the meat mixture into the dish, filling it halfway from the top.
  10. Spread the mashed potatoes over the meat mixture.
  11. Cut pats of butter on top of the mashed potatoes.
  12. Bake at 350°F until the butter melts and the potatoes start to brown.
