Ingredients

  • inner shucks from 1 dozen ears fresh corn
  • 2 cups corn meal
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • boiling water

Instructions

  1. Shuck and clean ears of roasting corn.
  2. Boil the corn on the cob for about 10 minutes.
  3. Pack the whole ears of corn into a clean crock or cut from the ear.
  4. Add a solution of salted water or sprinkle salt over the layers of corn, then add water to cover.
  5. When the corn is pickled, it can be eaten from the cob or cut off and fried in butter or other fat.
