Individual pineapple upside-down cakes feature caramelized brown sugar and pineapple slices with cherries, offering a sweet, fruity treat perfect for entertaining or a delightful dessert.

Ingredients

  • 1 cube butter or margarine
  • 1 1/4 cups brown sugar
  • 1 pineapple or yellow cake mix

Instructions

  1. Melt butter and 1 1/4 cups brown sugar together in a skillet until bubbly.
  2. Prepare the cake mix according to the package directions.
  3. Cover the bottom of a tuna can with 1 tablespoon of the brown sugar mixture.
  4. Place a pineapple slice on top of the brown sugar in the can.
  5. Put a maraschino cherry in the middle of the pineapple slice.
  6. Optionally, add a few walnuts around the pineapple for added taste.
  7. Pour 1/2 cup of cake batter on top of the pineapple in the can.
  8. Bake in a 350°F oven for 15 to 20 minutes.
  9. Turn the cake upside down onto a cookie sheet to cool and serve.
