Ingredients

Instructions

  1. Cut off all but 2 inches of beet tops and leave beets whole with root ends attached.
  2. Bring water, vinegar, and salt to a boil in a large pot.
  3. Add the whole beets to the boiling mixture.
  4. Reduce heat, cover, and cook until tender, about 35 to 45 minutes. Drain the beets.
  5. Run cold water over the beets and slip off their skins. Remove the root ends.
  6. Cut the beets into slices.
  7. Place the sliced beets and sliced onion in a glass or plastic bowl.
  8. In a saucepan, combine the remaining ingredients and bring to a boil.
  9. Reduce heat and simmer uncovered for 2 minutes.
  10. Pour the hot marinade over the beets and onion.
  11. Cover and refrigerate, spooning marinade over the beets occasionally, for at least 12 hours.
