A creamy Irish cottage cheese pie with a tender crust, subtly sweet and vanilla-infused, perfect for comforting desserts or brunch gatherings.

Ingredients

  • 1 lb cottage cheese (small curd)
  • 2 cups milk
  • 1/2 cup flour
  • 2 oz butter, melted
  • 2 teaspoons vanilla
  • 2 eggs
  • 2/3 cup sugar
  • pinch of salt

Instructions

  1. Line a pie plate with pie crust (bought or made).
  2. Start creaming the cheese in a mixer bowl at low speed, gradually adding milk, flour, melted butter, vanilla, eggs, sugar, and salt.
  3. Pour the mixture into the prepared pie dish.
  4. Bake at 400°F for 15 minutes, then reduce the temperature to 350°F and bake for 45 to 60 minutes until set.
  5. If desired, sprinkle cinnamon on top before placing in the oven.
