Ingredients

  • 3 cups flour
  • 2/3 cup sugar
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups raisins
  • 3 beaten egg whites
  • 1 1/2 cups low-fat buttermilk
  • 3 tablespoons vegetable oil

Instructions

  1. Sift dry ingredients together in a bowl.
  2. Add raisins to the dry mixture.
  3. Combine egg whites, buttermilk, and oil in a separate bowl.
  4. Add the wet ingredients to the dry mixture and mix well.
  5. Pour batter into a greased round iron frying pan.
  6. Bake in a 350°F oven for 1 hour.
  7. Cool for 10 minutes and then remove from the pan.
