Ingredients

  • 1/2 cup all-purpose flour
  • 1 1/2 teaspoons salt
  • 1/8 teaspoon pepper
  • 1 teaspoon paprika
  • 1 beaten egg
  • 2 tablespoons milk
  • 2 to 3 pounds frying chicken, cut in pieces
  • Crisco oil or solid Crisco

Instructions

  1. Mix together flour, salt, pepper, and paprika in a shallow dish.
  2. Mix beaten egg and milk in a separate bowl.
  3. Coat chicken pieces with seasoned flour, then dip in the egg mixture, and coat again with seasoned flour.
  4. Melt Crisco into a 12-inch skillet over medium heat until about 1/4-inch depth is reached.
  5. Cook chicken over medium heat in the skillet.
  6. Cover the skillet tightly and simmer, turning once or twice, until the thickest pieces are done, about 30 to 40 minutes.
  7. Remove the cover during the last 5 minutes of cooking to crisp the chicken.
