Ingredients

  • 1 1/2 lb. Russet potatoes
  • 1 tsp. olive oil
  • 1/2 tsp. basil
  • 1/2 tsp. crushed oregano
  • 1/2 tsp. garlic salt
  • 1/8 tsp. pepper

Instructions

  1. Cut potatoes into 1 1/2-inch pieces.
  2. Place the potatoes in a microwave-safe dish.
  3. Drizzle with olive oil and mix well to coat evenly.
  4. Sprinkle with basil, crushed oregano, garlic salt, and pepper.
  5. Cover with waxed paper and microwave on High for 7 to 9 minutes or until tender, mixing halfway through cooking.
  6. Sprinkle grated Parmesan cheese over the potatoes and microwave on High for an additional 1 minute.
