Ingredients

  • 1 large onion
  • 4 medium potatoes, cubed
  • 2 medium carrots, diced
  • salt to taste
  • dash of saffron or paprika
  • 4 Tbsp. parsley, minced
  • 1 c. water

Instructions

  1. Dice and brown the onion in canola oil in a pan.
  2. Add the remaining ingredients to the pan.
  3. Cook over low flame, stirring occasionally, until the carrots and potatoes are tender, adding more liquid if necessary to prevent sticking.
