Ingredients

  • 3 lb. spareribs
  • 2 bunches escarole
  • 2 cloves garlic
  • salt
  • pepper

Instructions

  1. Cut and clean the escarole.
  2. Boil the escarole for 10 minutes.
  3. Drain and set aside.
  4. Cut the spareribs, discarding excess fat.
  5. Put the spareribs in a pan with water to cover.
  6. Boil the spareribs for 30 minutes, skimming off foam.
  7. Add the escarole, garlic, salt, pepper, and red pepper to the pan.
  8. Simmer for an additional 30 to 45 minutes until the meat is tender and flavors meld.
