Ingredients

  • 1/2 lb. scallops
  • 1 cup melted butter
  • 1/2 cup olive oil
  • 4 to 5 cloves crushed garlic
  • bread crumbs
  • oil for frying

Instructions

  1. Combine olive oil, melted butter, and crushed garlic in a bowl.
  2. Coat the scallops with the mixture and let marinate at room temperature for 1 to 4 hours.
  3. In a large skillet, heat 1 inch of oil to 350°F.
  4. Bread the marinated scallops with bread crumbs.
  5. Fry the scallops in the hot oil for about 2 minutes on each side until golden.
  6. Place fried scallops on paper towels to drain excess oil.
  7. Serve with lemon wedges and cocktail sauce for dipping.
