Ingredients

  • 3 c. heavy cream
  • 1-inch piece vanilla bean
  • 6 Tbsp. sugar
  • 6 egg yolks

Instructions

  1. In a double boiler, heat 3 cups heavy cream with the vanilla bean.
  2. In a bowl, beat sugar with egg yolks until light and creamy.
  3. Remove vanilla bean and stir warm cream into the egg yolks carefully and slowly.
  4. Return mixture to double boiler.
  5. Stir constantly until the custard coats the spoon.
