Ingredients

  • 1 qt. white wine
  • 2 c. water
  • 1 piece cinnamon stick (3-inch)
  • 3 whole cloves
  • 3 whole allspice
  • 5 egg yolks
  • 2 Tbsp. sugar

Instructions

  1. Bring the white wine, water, cinnamon stick, cloves, and allspice to boiling.
  2. Strain to remove the spices.
  3. Discard the spices.
  4. Beat the egg yolks with sugar until thick.
  5. Slowly add the hot wine mixture to the beaten yolks, beating constantly until a thick foam forms.
  6. Be careful not to curdle the yolks by pouring hot wine too fast.
  7. Serve in cups with wafers.
