Ingredients

  • 4 to 5 boneless skinless chicken breasts
  • 4 to 5 Tbsp canola oil
  • 1/2 cup flour
  • 1/4 tsp Cajun seasoning
  • 1 to 2 tsp margarine
  • salt

Instructions

  1. Cut chicken breasts into bite-sized chunks.
  2. Season chicken with salt, pepper, and Cajun seasoning.
  3. Place flour and seasoned chicken in a Ziploc bag and shake well to coat.
  4. Zip the bag and set aside.
  5. Heat an empty pan on medium heat for 10 minutes.
  6. Add oil to a hot skillet and heat on medium to high heat until the oil smokes.
  7. Drop in the battered nuggets and brown on all sides.
  8. Turn off the heat and cover tightly to tenderize for 15 to 20 minutes.
  9. Turn the burner on high to crisp up the outside coating, adding margarine if the pan is too dry.
