Ingredients

  • 1 large rabbit
  • 6 medium potatoes
  • 1 small bundle carrots
  • 1/2 bundle celery
  • 1 medium onion
  • 6 oz. can tomato paste
  • 32 oz. can tomatoes
  • 12 oz. can whole kernel corn
  • 16 oz. can English peas

Instructions

  1. Cut the rabbit into pieces and boil until tender.
  2. Remove the meat from the bones and pull it into small pieces.
  3. Save the water used for boiling the rabbit.
  4. Cut the potatoes, carrots, and celery into small pieces.
  5. Put the chopped vegetables and the saved water into a 5-quart boiler and cook until tender.
  6. Add chopped onion, tomato paste, canned tomatoes, corn, and peas to the stew to thicken the juice.
  7. Make a roux or add instant potatoes, then season with salt and pepper to taste.
  8. Simmer until flavors meld and the stew is heated through.
