Ingredients

  • 2 pkg. spinach
  • 2 pkg. shrimp, cleaned
  • 1 1/2 lb. rice
  • 2 Tbsp. butter or margarine
  • 3 cooking tomatoes

Instructions

  1. Parboil spinach, then chop.
  2. Parboil shrimp and cut up if large.
  3. Cut tomatoes and onion into small pieces.
  4. Add margarine to the pot.
  5. Cook shrimp, spinach, tomatoes, and onion in the margarine for 15 minutes to make a flavorful sauce.
  6. Add rice and enough water to cover, then season with salt and pepper.
  7. Cook on low heat until rice is tender.
