  • 2 Tbsp. sugar
  • 1 small jar pimentos
  • 1/4 c. bacon bits
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 2 Tbsp. vinegar
  • 2 Tbsp. milk or cream

Instructions

  2. In a large mixing bowl, combine mayonnaise, sugar, pimentos, bacon bits, salt, pepper, vinegar, and milk or cream.
  3. Add the sliced vegetables to the mixture and mix well to coat evenly.
  4. Transfer to a container and marinate in the refrigerator for 24 hours before serving.

Tips & Substitutions

For a creamier texture, consider substituting sour cream for part of the mayonnaise. If you're short on time, you can use pre-packaged coleslaw mix instead of slicing your own vegetables. Adding a touch of garlic powder or fresh herbs like dill can enhance the flavor. This dish can also be made a day in advance to allow the flavors to meld, making it perfect for gatherings.

Serving Suggestions

Serve Jean's Marinated Vegetables as a refreshing side dish at summer gatherings or with grilled meats. It pairs beautifully with Pork recipes or as part of a larger spread that includes dishes like Jamaican Peas And Rice. For a complete meal, enjoy it alongside a light salad or sandwiches.

Storage & Reheating

Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop, making it even tastier the next day. To serve, there’s no need to reheat; this dish is best enjoyed cold or at room temperature, making it ideal for picnics or barbecues.
