A light, fluffy jelly roll cake with a delicate vanilla flavor, filled with sweet currant jam, perfect for a charming dessert or afternoon tea treat.

Ingredients

  • 4 eggs
  • 3/4 cup sugar
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3/4 cup sifted cake flour

Instructions

  1. Beat eggs until fluffy, then gradually add sugar and beat until lemon-colored and doubled in volume.
  2. Add vanilla extract.
  3. Fold in sifted cake flour combined with baking powder until well blended.
  4. Pour batter into a greased and wax paper-lined jelly roll pan.
  5. Bake in a 400°F (200°C) oven for 12 minutes.
  6. Remove from oven, place on a dampened dish towel, and peel off the wax paper. Roll up the cake in the towel and let cool.
  7. Unroll the cooled cake, spread with currant jam, then re-roll.
  8. Dust with powdered sugar before serving.
