Ingredients

  • 2 lb. Jerusalem artichokes
  • 2 medium/small onions
  • 2 beef bouillon cubes
  • 5 to 6 cups water

Instructions

  1. Peel the Jerusalem artichokes and chop them coarsely.
  2. Place the chopped artichokes, sliced onions, beef bouillon cubes, and water in a large pan.
  3. Bring the mixture to a boil, then lower the heat.
  4. Cover and simmer for 1 1/2 hours.
  5. Rub the cooked mixture through a sieve or grind in a food mill.
  6. Serve the soup hot.
