- Put chicken in a pan and cover with water; add salt and boil until tender.
- Remove chicken from the pan, reserve the liquid, and cut chicken into bite-sized pieces.
- Cook the frozen mixed vegetables in 2 cups of the reserved chicken broth, boiling on low for 6 minutes.
- Drain the vegetables and mix with the chopped chicken, cream of Cheddar cheese soup, pepper, and chives.
- Pour the mixture into a 2 1/2-quart casserole dish that has been sprayed with Pam.
- Bake at 350°F (175°C) for 25 to 30 minutes.
