Ingredients

  • 2 lb. chicken breast
  • 1 tsp. salt
  • 2 lb. frozen mixed vegetables with broccoli
  • 1 can cream of Cheddar cheese soup
  • 1 tsp. pepper
  • 1 Tbsp. chives

Instructions

  1. Put chicken in a pan and cover with water; add salt and boil until tender.
  2. Remove chicken from the pan, reserve the liquid, and cut chicken into bite-sized pieces.
  3. Cook the frozen mixed vegetables in 2 cups of the reserved chicken broth, boiling on low for 6 minutes.
  4. Drain the vegetables and mix with the chopped chicken, cream of Cheddar cheese soup, pepper, and chives.
  5. Pour the mixture into a 2 1/2-quart casserole dish that has been sprayed with Pam.
  6. Bake at 350°F (175°C) for 25 to 30 minutes.
