Jicama Orange Salad

Ingredients

  • 2 cups cubed, peeled jicama
  • 2 large navel oranges peeled, sliced, cut in half
  • 1/2 cup orange juice
  • 2 tablespoons chopped fresh cilantro
  • 1/2 teaspoon salt
  • 1 avocado peeled, cubed

Instructions

  1. In a medium nonmetal bowl, combine all ingredients except avocado; mix well.
  2. Cover and refrigerate for 2 to 3 hours, stirring occasionally.
  3. Add avocado and toss gently.
  4. Drain salad, reserving the orange juice dressing.
  5. If desired, serve on lettuce-lined plates with reserved dressing.
