Ingredients

  • 4 to 4 1/2 cups whole wheat flour
  • 2 tablespoons yeast
  • 1 cup milk
  • 3/4 cup water
  • 1/2 cup oil
  • 3 to 4 tablespoons honey or molasses
  • 1 teaspoon salt
  • 2 eggs

Instructions

  1. Stir together 2 cups of flour and yeast.
  2. Heat milk, water, oil, honey, and salt until very warm (120° to 130°).
  3. Pour the warm mixture into the yeast and flour mixture.
  4. Beat for 3 minutes with an electric mixer or by hand 300 strokes.
  5. Add enough additional flour to make a soft dough.
  6. Beat well or knead briefly until smooth.
  7. Let the dough rest for 10 minutes.
  8. Roll out the dough to 1/2-inch thickness on a well-floured surface.
  9. Cut into 3 or 4-inch rounds using a canning jar ring or tuna can.
  10. Let the rounds rise on greased baking sheets for 30 minutes.
  11. Bake at 400°F (200°C) until lightly browned, about 12 to 15 minutes.
  12. Cool on racks before serving.
