A savory tomato appetizer featuring layers of fresh slices topped with cheesy broccoli mixture, perfect for entertaining or a light, flavorful snack that highlights fresh vegetables and cheese.

Ingredients

  • 3 large tomatoes
  • salt
  • 4 oz. Swiss cheese, shredded
  • 10 oz. frozen chopped broccoli, cooked and drained
  • 1/4 cup chopped onion

Instructions

  1. Cut tomatoes into slices 3/4-inch thick and sprinkle with salt.
  2. Set aside 2 tablespoons of shredded cheese.
  3. Combine remaining shredded cheese, cooked and drained chopped broccoli, and chopped onion.
  4. Place tomato slices on a greased baking sheet and spoon the broccoli mixture on top, dividing it evenly between the slices.
  5. Sprinkle the reserved shredded cheese on top of each tomato slice.
  6. Broil 7 or 8 inches from heat for 10 to 12 minutes until cheese is melted and bubbly.
