- Preheat oven to 350°F.
- Combine graham cracker crumbs and margarine or butter.
- Press firmly on the bottom of a 9-inch spring-form pan to form the crust.
- In a large mixing bowl, beat the cream cheese until fluffy.
- Gradually beat in the sweetened condensed milk until smooth.
- Beat in the eggs one at a time, then add sour cream and vanilla extract, mixing well.
- Pour the filling into the prepared crust.
- Bake for 50 to 55 minutes or until lightly browned around the edges and the center is slightly soft.
- Allow the cheesecake to cool.
- Chill in the refrigerator.
- Top with cherry filling or other fruit topping before serving.
- Refrigerate leftovers.
