Ingredients

  • 1 lb. grated cheese (Cheddar)
  • 1 lb. grated cheese (Jack)
  • 1 can diced chilies
  • 4 eggs

Instructions

  1. Preheat oven to 325°F.
  2. Butter a deep casserole dish and layer grated cheddar, grated jack, and canned diced chilies.
  3. Separate the eggs, keeping whites and yolks apart.
  4. Beat egg whites until stiff peaks form, then fold in beaten yolks.
  5. Gently pour the folded egg mixture over the cheese and chili layers.
  6. Bake for 30 minutes.
  7. Drain tomatoes and press them into the souffle with a fork.
  8. Bake for an additional 30 minutes.
