Ingredients

  • 1 can condensed cream of mushroom soup
  • 1 can condensed cream of chicken soup
  • ¼ cup dry minced onion
  • ¼ cup sherry (or water)
  • 1 cup raw white rice
  • 6 to 8 pieces broiler‑fryer chicken or boneless breasts

Instructions

  1. Lightly grease a 2½‑quart casserole dish.
  2. Mix together the condensed cream of mushroom soup, condensed cream of chicken soup, minced onion, and sherry.
  3. Spread ½ cup of raw white rice in the bottom of the casserole.
  4. Place 3 to 4 pieces of broiler‑fryer chicken or boneless breasts on top of the rice.
  5. Pour half of the soup mixture over the chicken and sprinkle with half the Parmesan cheese.
  6. Cover the dish and bake at 350°F (175°C) for about 25–30 minutes, or until the chicken is cooked through and the rice is tender.
  7. Serve hot, optionally garnished with fresh herbs.
