Greek Cornbread Casserole

- Preheat oven to 400°F (200°C).
- In a large bowl, whisk 4 beaten eggs, 1/2 teaspoon salt, and the Jiffy cornbread mix until combined. Add 1 chopped onion, 6 oz cottage cheese, and a stick of melted oleo; stir to mix. Fold in 10 oz of cooked, well‑drained broccoli.
- Transfer the mixture to a greased 9×13‑inch baking dish. Sprinkle grated cheddar cheese and bread crumbs over the top. Bake for 30 minutes until golden brown. After 30 minutes, return to oven and bake an additional 5 to 7 minutes until the cheese melts.
- Let stand for a few minutes before slicing and serving.
