Ingredients

  • 4 eggs, beaten with fork
  • 1/2 tsp. salt
  • 1 (8 1/2 oz.) pkg. Jiffy cornbread mix
  • 1 chopped onion
  • 6 oz. small curd cottage cheese
  • 1 stick oleo, melted
  • 1 (10 oz.) box chopped broccoli, cooked and well-drained
  • grated Cheddar cheese
  • bread crumbs

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, whisk 4 beaten eggs, 1/2 teaspoon salt, and the Jiffy cornbread mix until combined. Add 1 chopped onion, 6 oz cottage cheese, and a stick of melted oleo; stir to mix. Fold in 10 oz of cooked, well‑drained broccoli.
  3. Transfer the mixture to a greased 9×13‑inch baking dish. Sprinkle grated cheddar cheese and bread crumbs over the top. Bake for 30 minutes until golden brown. After 30 minutes, return to oven and bake an additional 5 to 7 minutes until the cheese melts.
  4. Let stand for a few minutes before slicing and serving.
