Johnnie Cake is a traditional hearty bread made from Indian meal, baked to a golden crust. Perfect for rustic meals and enjoyed hot with butter.

Ingredients

  • 1 quart Indian meal
  • 1 pint warm water
  • 1 teaspoon salt

Instructions

  1. Sift the Indian meal into a pan; make a hole in the middle and pour in warm water, adding salt.
  2. Mix the meal and water gradually into a soft dough using a spoon, stirring briskly for at least a quarter of an hour until light and spongy.
  3. Spread the dough smoothly and evenly on a straight, flat board or similar surface.
  4. Place the board nearly upright before an open fire and support it with an iron against the back.
  5. Bake the cake thoroughly until golden and cooked through.
  6. Cut the baked cake into squares and serve hot, split and buttered.
