Delicious Denver Muffins combine sweet dates and crunchy walnuts with whole wheat flour, offering a hearty, naturally sweet treat suitable for breakfast or snacks.

Ingredients

  • 8 oz. pitted dates, chopped
  • 3/4 cup water
  • 1/4 cup Mazola corn oil
  • 1/2 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1/2 cup sugar
  • 1/3 cup coarsely chopped walnuts
  • 1/2 teaspoon baking soda

Instructions

  1. Boil water in a pot.
  2. Add chopped dates to the boiling water and cook until softened.
  3. Add corn oil to the date mixture and stir.
  4. In a separate bowl, mix whole wheat flour, sugar, chopped walnuts, and baking soda.
  5. Pour the dry mixture into the date mixture and stir well.
  6. Add vanilla extract and mix thoroughly.
  7. Fill muffin tins with baking cups two-thirds full with the batter.
  8. Bake at 375°F (190°C) for 25 minutes.
  9. Allow muffins to cool before serving or freeze for later.
