John's Gnocchi features soft, fluffy potato dumplings infused with cheesy richness and browned butter, perfect for comforting meals and suitable for family dinners or special occasions.

Ingredients

  • 3 1/2 cups flour
  • 7 medium potatoes
  • 1 1/2 cups grated cheese
  • 2 tablespoons browned butter
  • 2 beaten eggs
  • pinch of pepper

Instructions

  1. Boil the potatoes, peel, and put into a potato ricer to cool.
  2. Mix the flour and grated cheese in a bowl.
  3. Add cooled potatoes, salt, pepper, browned butter, and beaten eggs to the mixture.
  4. Mix until the dough no longer sticks to your hands, adding more flour if needed.
  5. Roll out small pieces of dough on a floured board, forming rope shapes.
  6. Cut the ropes into 1-inch pieces to form the gnocchi.
  7. Drop the gnocchi into boiling water and cook for about 15 minutes until they float.
  8. Drain the gnocchi and rinse with warm water.
  9. Pour sauce over the gnocchi and serve.
