- Boil the potatoes, peel, and put into a potato ricer to cool.
- Mix the flour and grated cheese in a bowl.
- Add cooled potatoes, salt, pepper, browned butter, and beaten eggs to the mixture.
- Mix until the dough no longer sticks to your hands, adding more flour if needed.
- Roll out small pieces of dough on a floured board, forming rope shapes.
- Cut the ropes into 1-inch pieces to form the gnocchi.
- Drop the gnocchi into boiling water and cook for about 15 minutes until they float.
- Drain the gnocchi and rinse with warm water.
- Pour sauce over the gnocchi and serve.
