  • 2 lb. chicken, cut into serving portions

  • 1 Tbsp. curry, nutmeg or thyme
  • 1 1/2 tsp. salt
  • 6 oz. can tomato paste
  • 2 c. uncooked rice

Instructions

  1. In a Dutch oven, heat vegetable oil.
  2. Fry the chicken pieces until browned.
  3. Add chopped onion and tomatoes to the chicken and cook until soft.
  4. If desired, add other vegetables such as green peppers, cabbage, or mushrooms and cook until tender.
  5. Add 2 cups of water and the spices (crushed red pepper, curry/nutmeg/thyme, salt). Cover and cook over low heat for about 25 minutes or until the chicken is tender.
  6. Add 1 1/2 cups or more water and tomato paste; bring to a boil.
  7. Add uncooked rice, cover, and cook for about 15 minutes or until rice is done, stirring often to prevent sticking.
  8. If the rice mixture becomes too dry, add more water as needed.
  9. Serve hot and enjoy.
