Ingredients

  • 3-8 oz. cream cheese
  • 6 eggs
  • 1 cup sugar
  • 1 pint sour cream
  • 1 teaspoon vanilla
  • Graham cracker crumbs

Instructions

  1. Ensure all ingredients are at room temperature before starting.
  2. Preheat oven to 350°F (175°C).
  3. Combine graham cracker crumbs with melted butter and press into the bottom of a springform pan to form the crust.
  4. In a mixing bowl, beat the cream cheese until smooth.
  5. Add sugar and continue to beat until well combined.
  6. Separate eggs, adding the yolks to the cream cheese mixture one at a time, mixing well after each addition.
  7. In a separate bowl, beat egg whites until stiff peaks form.
  8. Fold the egg whites into the cream cheese mixture gently.
  9. Add vanilla extract and sour cream, mixing until smooth.
  10. Pour the filling over the prepared crust.
  11. Bake in the preheated oven for approximately 60 minutes, or until the center is set.
  12. Allow the cheesecake to cool completely, then refrigerate for several hours or overnight before serving.
