Turkey-Vegetable Stroganoff

- Bring 8 cups of hot water to a boil in a large saucepot.
- Heat 1 tablespoon of vegetable oil in a large skillet over high heat.
- Crumble in 1 pound of ground turkey and cook for 5 minutes, stirring often, until no longer pink.
- Add 8 ounces of fine egg noodles to the boiling water and cook for 4 minutes until tender.
- Drain the noodles and spread on a serving platter.
- In the skillet with the cooked turkey, add 2 cups of frozen mixed vegetables, 1 teaspoon of Italian herb seasoning, 3/4 teaspoon of minced garlic, 1/2 teaspoon of salt, and 1/4 teaspoon of pepper.
- Cook, stirring occasionally, until the vegetables are heated through.
- Prepare the gravy mix by combining the 3/4 ounce packet with cold water as instructed on the package, then add to the skillet.
- Simmer the mixture until slightly thickened.
- Remove from heat and stir in 1/4 cup of sour cream.
- Serve the turkey-vegetable mixture over the cooked noodles.
