Ingredients

  • 3 cups Cheerios cereal, finely crushed
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 1/2 to 3 pounds fryer/broiler chicken, cut up
  • 1/2 cup evaporated milk
  • 2 tablespoons margarine or butter, melted

Instructions

  1. Heat oven to 350°F (175°C).
  2. Line a 13 x 9 x 2-inch rectangular pan with aluminum foil.
  3. Mix crushed Cheerios cereal, salt, and pepper in a bowl.
  4. Dip chicken pieces into evaporated milk, then roll in the cereal mixture until well coated.
  5. Place coated chicken, skin side up, in the prepared pan.
  6. Drizzle melted margarine or butter over the chicken.
  7. Bake until chicken is cooked through and juices run clear, about 1 hour.
  8. Do not turn the chicken during baking.
