- Wash steaks and pat with 1 teaspoon of cornstarch.
- Wash and slice the onion (leek).
- In a skillet, heat the butter or margarine.
- Saute onions until soft. Remove from heat and set aside.
- Add steaks to the hot pan.
- Cook steaks for 4 to 5 minutes per side for rare, or 7 to 8 minutes per side for well done.
- Remove steaks and place on a platter.
- Add beef broth, vinegar, thyme or rosemary, and butter to the skillet. Stir and cook until the pan juices are smooth and shiny.
- Pour the sauce over the steaks.
- Reheat the onions and top the steaks before serving.
