Ingredients

  • 8 potatoes, cubed
  • 16 slices bacon, fried and crumbled
  • 1 medium onion, diced
  • 1 large can whole tomatoes, chopped
  • 2 medium cans red kidney beans

Instructions

  1. Fry the bacon slices until crispy, then crumble and set aside.
  2. Save the bacon grease for cooking.
  3. In a large pot, sauté the diced onion in the bacon grease until translucent.
  4. Add the chopped tomatoes and cook for a few minutes.
  5. Stir in the cubed potatoes and cook for another 10 minutes.
  6. Pour in the red kidney beans and add the crumbled bacon.
  7. Simmer the stew for 20-25 minutes until potatoes are tender and flavors meld.
