- Preheat oven to 400°F.
- In a frying pan, brown the cubed chicken, add seasoning salt and 1/4 cup water, then turn down the burner to low and cover.
- In a large mixing bowl, combine the cream of chicken soup, milk, and diced green peppers.
- Once the chicken is cooked, add it to the soup mixture.
- Line a 9x13-inch greased pan with a layer of corn chips.
- Spoon the chicken and soup mixture over the chips.
- Sprinkle about 1/3 of a pound of grated pepper Jack cheese over the mixture.
- Repeat the layers: add another layer of chips, then the remaining cheese.
- Bake in the oven for 15-20 minutes.
- Let the casserole stand for 10 minutes before serving.
