Ingredients

  • 1 to 1.5 pounds chicken breast, cubed and browned
  • 1 bag corn chips
  • 2 small cans diced green peppers
  • 1 pound pepper Jack cheese, grated
  • 1 large can cream of chicken soup
  • 1 teaspoon seasoning salt
  • 1/4 cup water
  • 1/4 cup milk

Instructions

  1. Preheat oven to 400°F.
  2. In a frying pan, brown the cubed chicken, add seasoning salt and 1/4 cup water, then turn down the burner to low and cover.
  3. In a large mixing bowl, combine the cream of chicken soup, milk, and diced green peppers.
  4. Once the chicken is cooked, add it to the soup mixture.
  5. Line a 9x13-inch greased pan with a layer of corn chips.
  6. Spoon the chicken and soup mixture over the chips.
  7. Sprinkle about 1/3 of a pound of grated pepper Jack cheese over the mixture.
  8. Repeat the layers: add another layer of chips, then the remaining cheese.
  9. Bake in the oven for 15-20 minutes.
  10. Let the casserole stand for 10 minutes before serving.
