- Dissolve yeast in 1/4 cup warm water and let stand until frothy.
- In a large bowl, blend 2 cups water, evaporated milk, honey, and oats.
- Add the yeast mixture to the bowl. Stir well and cover. Let stand for 30 minutes.
- Stir down the mixture and add salt, oil, cornmeal, and whole wheat flour. Beat until smooth.
- Add enough white flour to make a soft dough. Turn out onto a floured surface and knead for 8 to 10 minutes.

- Punch down the dough, knead lightly, and let rest for 10 minutes.
- Divide the dough into two, place in greased 9 x 5 x 3-inch loaf pans. Cover and let rise until doubled, about 30 minutes.
- Bake in a preheated 375°F (190°C) oven for about 35 minutes.
- Turn out the loaves onto wire racks to cool.
