Ingredients

  • 2 pkg dry yeast
  • 2 1/4 cups warm water
  • 13 oz can evaporated milk
  • 3 tablespoons honey
  • 2 cups oats
  • 2 teaspoons salt
  • 1/4 cup cooking oil
  • 1/2 cup cornmeal
  • 2 cups whole wheat flour
  • 3 cups white flour

Instructions

  1. Dissolve yeast in 1/4 cup warm water and let stand until frothy.
  2. In a large bowl, blend 2 cups water, evaporated milk, honey, and oats.
  3. Add the yeast mixture to the bowl. Stir well and cover. Let stand for 30 minutes.
  4. Stir down the mixture and add salt, oil, cornmeal, and whole wheat flour. Beat until smooth.
  5. Add enough white flour to make a soft dough. Turn out onto a floured surface and knead for 8 to 10 minutes.
  6. Place the dough in a greased bowl, cover, and let rise until doubled, about 1 hour.
  7. Punch down the dough, knead lightly, and let rest for 10 minutes.
  8. Divide the dough into two, place in greased 9 x 5 x 3-inch loaf pans. Cover and let rise until doubled, about 30 minutes.
  9. Bake in a preheated 375°F (190°C) oven for about 35 minutes.
  10. Turn out the loaves onto wire racks to cool.
