Ingredients

  • 2 lb. julienned carrots
  • 2 Tbsp. virgin olive oil
  • 1/2 c. sweet vermouth
  • salt to taste
  • black pepper (fresh ground)
  • 2 Tbsp. fresh chopped parsley

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add the julienned carrots and sauté for about 5 minutes until slightly tender.
  3. Pour in the sweet vermouth and cook until it reduces and the carrots are fully tender, about 10 minutes.
  4. Season with salt and freshly ground black pepper to taste.
  5. Sprinkle with chopped parsley before serving.
