Kim'S Banana Bread

Ingredients

  • 1/2 c. butter - room temp
  • 3/4 - 1 c sugar
  • 2 large eggs
  • 1/2 t nutmeg
  • 1/4 t allspice (optional)
  • 1/4 c milk
  • 1T lemon juice
  • 1 t. baking soda
  • 2 c all purpose flour
  • 3 medium bananas - very ripe
  • 1 c chopped nuts (optional)

Instructions

  1. Flour and grease 1 large or 2 medium bread pans
  2. preheat oven to 350 farenheit
  3. cream butter and sugar until fluffy
  4. Add eggs, beat thoroughly
  5. Add nutmeg, allspice and baking soda. mix to combine
  6. stir milk and lemon juice together
  7. Alternately add 1/2 of flour and 1/2 of milk to bowl. Mix to combine. Add remaining flour and milk
  8. Mash bananas on a plate
  9. Stir bananas into batter.
  10. Add nuts if using
  11. Pour into prepared bread pans.
  12. Bake at 350 F 1 1/4 hour for large pan or 50 minutes for medium. test with skewer or toothpick - remove when small crumbs adhere.
  13. Cool in baking pan for 15 minutes, remove and cool on wire rack
