Ingredients

  • 1 fryer chicken
  • 1 (10 3/4 oz.) can cream of mushroom soup
  • 1 (10 3/4 oz.) can chicken soup
  • 1 (10 oz.) can Ro-Tel tomatoes and green chilies
  • 1/2 can chicken broth
  • 12 corn tortillas
  • 1 onion, chopped
  • 2 cups cheese, grated

Instructions

  1. Cook chicken in a small amount of lightly salted water until tender.
  2. Bone and cut the chicken into pieces.
  3. Blend together the two cans of cream of mushroom soup, Ro-Tel tomatoes with green chilies, and chicken broth.
  4. In a 2 1/2-quart greased casserole, place a layer of chicken, half of the tortillas cut into large pieces, half of the chopped onion, half of the grated cheese, and half of the soup mixture.
  5. Repeat the layers, ending with grated cheese on top.
  6. Bake for 1 hour at 350°F (175°C).
