Kipper Pate

- Melt a knob of unsalted butter in a frying pan.
- Add kipper fillets and fry gently for 10 minutes or until the fish is soft and flakes easily with a fork.
- Remove from the pan, leave to cool, then remove any skin and large bones.
- Put the kipper fillets in a bowl and mash with a fork.
- Beat the remaining ingredients—cream cheese, crushed garlic, horseradish, and black pepper—with a wooden spoon until smooth.
- Add black pepper to taste and beat until the pâté is quite smooth.
- Spoon the mixture into a container and finish with a lemon twist if desired.
