Kipper Pate

A smooth and flavorful fish pâté featuring tender kipper fillets, creamy cheese, and a hint of horseradish, perfect as an elegant appetizer or spread for special occasions.

Ingredients

  • unsalted butter
  • 1/2 lb. kipper fillets
  • 1/2 lb. cream cheese
  • 1 garlic clove
  • 1 Tbsp. grated or creamed horseradish
  • freshly ground black pepper
  • lemon twist

Instructions

  1. Melt a knob of unsalted butter in a frying pan.
  2. Add kipper fillets and fry gently for 10 minutes or until the fish is soft and flakes easily with a fork.
  3. Remove from the pan, leave to cool, then remove any skin and large bones.
  4. Put the kipper fillets in a bowl and mash with a fork.
  5. Beat the remaining ingredients—cream cheese, crushed garlic, horseradish, and black pepper—with a wooden spoon until smooth.
  6. Add black pepper to taste and beat until the pâté is quite smooth.
  7. Spoon the mixture into a container and finish with a lemon twist if desired.
