Ingredients

  • 5 or 6 kiwi fruits
  • 1/2 tsp. grated lime peel
  • 1 Tbsp. lime juice
  • 1 cup low-fat cottage cheese
  • 1/3 cup sugar
  • 1 egg
  • 1 Tbsp. cornstarch
  • 6 tart shells

Instructions

  1. Peel two of the kiwi fruits.
  2. In a blender, puree the peeled kiwi fruits (about 2 cups).
  3. In a small saucepan, combine the kiwi puree, grated lime peel, and lime juice.
  4. Bring the mixture to a boil, then reduce heat and cook for 1 minute.
  5. Set the mixture aside to cool.
  6. Rinse the blender container.
  7. In the blender, combine cottage cheese, sugar, egg, and cornstarch; cover and blend until smooth.
  8. Add the cooled kiwi mixture and blend until well combined.
  9. Pour the filling into the baked tart shells.
  10. Bake in a 325°F oven for 25 to 30 minutes, or until a knife inserted near the center comes out clean.
  11. Allow the tarts to cool.
  12. Peel and slice the remaining kiwi fruits, then arrange slices on top of the cooled tarts.
