- Peel two of the kiwi fruits.
- In a blender, puree the peeled kiwi fruits (about 2 cups).
- In a small saucepan, combine the kiwi puree, grated lime peel, and lime juice.
- Bring the mixture to a boil, then reduce heat and cook for 1 minute.
- Set the mixture aside to cool.
- Rinse the blender container.
- In the blender, combine cottage cheese, sugar, egg, and cornstarch; cover and blend until smooth.
- Add the cooled kiwi mixture and blend until well combined.
- Pour the filling into the baked tart shells.
- Bake in a 325°F oven for 25 to 30 minutes, or until a knife inserted near the center comes out clean.
- Allow the tarts to cool.
- Peel and slice the remaining kiwi fruits, then arrange slices on top of the cooled tarts.
