Ingredients

  • 1 cup flour
  • 3 tablespoons powdered sugar
  • 1/2 cup chopped nuts
  • 1/2 cup oleo
  • 8 ounces cream cheese
  • 1 cup powdered sugar
  • 8 ounces Cool Whip
  • 2 packages (3 oz each) instant toasted coconut pudding

Instructions

  1. Mix flour, powdered sugar, chopped nuts, and oleo to make a pie crust.
  2. Pat the mixture into a 9 x 13-inch pan and bake for 10 to 15 minutes at 350°F.
  3. Beat the cream cheese and powdered sugar until light and fluffy.
  4. Fold in 8 ounces of Cool Whip and pour over the baked crust.
  5. Mix the coconut pudding with milk according to package instructions.
  6. Pour the coconut pudding over the cream cheese layer.
  7. Spread 4 1/2 ounces of Cool Whip over the top.
  8. Sprinkle with coconut and a few chopped nuts.
  9. Refrigerate to set before serving.
