- Place couscous in bowl with butter and season with sea salt and black pepper. Add 2/3 boiling water. Cover with plastic wrap. Let stand for 3 mins, or until liquid has been absorbed.
- Fluff couscous with fork. Add kofta pieces, pistachios, mint, onion and chili pepper. Toss together. Serve hot or cold with tzatziki.
