Ingredients

  • 2 1/3 cups flour
  • 1/2 teaspoon baking soda
  • 1 cup sugar
  • 3 tablespoons vegetable oil
  • 1 teaspoon lemon rind
  • 2 cups halved cranberries
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 egg, slightly beaten
  • 3/4 cup orange juice
  • 1/2 cup chopped walnuts

Instructions

  1. Grease and flour a 1-pound loaf pan.
  2. Combine all ingredients in a mixing bowl.
  3. Pour the batter into the prepared loaf pan.
  4. Bake in a preheated 375°F (190°C) oven for 1 hour.
