Ingredients

  • 12 medium green or yellow squash
  • 1 cup rice
  • 1.5 pounds coarsely ground or diced lamb
  • 1 tablespoon salt
  • pepper to taste
  • cinnamon to taste
  • allspice to taste
  • 1 small can tomato sauce

Instructions

  1. Cut the stems off the squash, scoop out the seeds, and wash the squash.
  2. In a bowl, combine rice, ground lamb, salt, pepper, cinnamon, and allspice.
  3. Stuff each squash with the rice and lamb mixture.
  4. Place the stuffed squash in a pot, add tomato sauce, canned tomatoes, and enough water to cover.
  5. Bring to a boil, then reduce heat and simmer uncovered for about 60 minutes or until the squash is tender and the filling is cooked through.
